Cheese Spinach Quesadillas

These are served at our local Mexican restaraunt and I think this is a good likeness to it! Feel free to experiment with this recipe! makes 2 for main dish, 8 for appetizers

SERVES 2 -8 (change servings and units)

Ingredients

Directions

  1. 1
    Melt butter in a skillet and place a tortilla on it.
  2. 2
    Add half of the cheese to the tortilla.
  3. 3
    On top of the cheese, add half of the green onion and spinach.
  4. 4
    Sprinkle with half the garlic salt and chili powder.
  5. 5
    Top with another tortilla, turn over and fry in skillet until the cheese melts.
  6. 6
    Slice into quarters (or 1/8's for appetizers) and serve hot.
  7. 7
    Repeat with next 2 tortillas.
  8. 8
    Good served with salsa and sour cream!
  9. 9
    This would be great served with guacamole on lettuce and refried beans or/and rice.

We really liked these even my 3 yo ate them. the 4 yo noticed the spinach so he didn't like them anymore. I had a little trouble spreading the spinach out so it wasn't in clumps. I used about a half teaspoon or so of butter and it made a difference. Thank you so much for a great recipe.

    I collect quesadilla recipes but have not run across anything like these. They were fabulous and very easy to make. I used a colby-jack cheese blend. I served them with homemade salsa and refried beans. Made a delicious light supper for me and my husband. Thanks.

    These are sooooooooooooo addicting!!! I had them for lunch 2 days in a row now.. and I think I want them again!!! lol Instead of green onions I used regular onion, as I ran out of green onions making another recipe *ack!*.. but they were SOOO good with regular onion (I sauted the onion before adding to the tortilla!). YUM YUM YUM!!! Thanks Sharon.. this is something I will make OFTEN!!! Great with guacamole and refried beans. I didnt use lettuce as I felt it overpowered the flavor of the spinach.. Thanks again!!!! Keep these great recipes coming sharon!
