Chicken Enchilada Soup (Large Pot)

This soup is very easy to make and is so good that my family cannot get enough of it.

SERVES 6 -8 , 12 bowls (change servings and units)

Ingredients

Directions

    Grill Chicken & Dice.
  2. 2
    In large (nice and large) soup pot, sauté onion, garlic and green chilies in oil over medium-high. Heat until soft and light brown, about 10 minutes.

    Add all other ingredients and mix until well blended except broth & cheese.
  4. 4
    Add Chicken broth and mix well.
  5. 5
    Let simmer over medium heat for 30-60 minutes so flavors can blend. (simmer longer for best flavor).

    Add Cheese and simmer for 15 minutes, stirring frequently.

    Serve or Freeze.

A great soup.We grilled the chicken out on the grill. That is what you ment correct. We had this soup for Christmas dinner, the whole family loved it. Thanks for sharing. I will be making it for our Church potluck soon.

    This was just ok for us. I think it was the chicken, it didn't seem to fit. Beef would be better, for us anyway. It makes a LOT. I had an 8qt pot and it was all the way up to the rim.

    this recipe was delicious, the best one I have tried on this website. It made so much, I have quite a bit in the freezer as well. I didn't add all of the chicken broth, because I like my soups more like a chowder, it was so delicious, and so filling!
