Chicken Pita Burger

This is a very satisfying lunch. The recipe is from a Chatalaine Magazine with several adaptations by me. If you are making these for kids buy the small pitas and just put one burger in each

SERVES 6 (change servings and units)

    Heat oven to 400 degrees F.
  2. 2
    In a large bowl mix the chicken with, yogurt, fresh coriander,ginger, curry, salt, dry coriander, cumin& cayenne Use your hand to really mix spices, yogurt& chicken together.

    Sprinkle with tomatoe, jalapeno,& onions.

    Mix until evertthig is evenly blended.
  5. 5
    If the mixture is so wet that it clings to your hands stir in some bread crumbs Form the mixture into patties apprx 2 1/2" by 1/2" thick.

    Spray a baking sheet with veggie oil.

    Place patties on the baking sheet single layer and bake in 400F oven for apprx 8 minutes, turn patties oven and bake for another 8 minutes or until they are cooked Slice the pitas in half, wrap in foil and warm in the oven during the last few minutes that the patties are baking Place 2 patties in each pita and top with your favoites (I love chopped sweet onion, lettuce, tomatoes, feta cheese and sliced olives).

I really enjoyed this quite healthy alternative to a beef burger. I used some breadcrumbs, but less then 1/4 cup. Next time I'll probably add some garlic, as I felt the patties could need a little bit of something extra. Rather than bake them I grilled them on my George Foreman grill, which worked great. Thanks for sharing Bergy!

    I loved this burger! I used turkey because thats what I had, and didn't need to use the bread crumbs .. served it on a regular bun with lots of lettuce, tomatoes and mayo .. thanks!!

    I love this burger. I made a little different because I had chicken patties (pre-made). I marinated the patties with the yogurt, ginger, curry,cumin and cayenne overnight. I served them with onion, jalepeno, tomato and cheese on a 12 grain bread. Definately will be making them again.
