Strawberries With Cheesecake Cream

    Heat oven to 350 F.

    Place vanilla wafers in blender container; process until finely crushed.

    In small bowl, combine crumbs and butter; mix well.

    Spread on ungreased cookie sheet.

    Bake at 350 F.

    for about 5 minutes or until golden brown.

    In large bowl, combine all remaining ingredients except strawberries; beat until smooth.

    To serve, divide strawberries into large wine glasses or individual dessert dishes.

    Top each with about 1/4 cup cream cheese mixture; sprinkle each with 2 Tbsp crumbs.

    Okay, so I've made this dessert a bunch of times since New Years. For Valentine's Day, I mixed the strawberries with milk chocolate shavings and used chocolate wafer crumbs instead of vanilla. Also excellent!

    Boy, a real keeper! I 0 % fatted it, with 0% cream cheese, skim milk, nutrisweet, etc, and didn't use the cookies. I used a combo of strawberries and blueberries for the fruit. Really good, really fast, really pretty! I think it would be lovely with peaches...and cherries would be great---next time!
