Wife: I met my Moroccan husband four years ago & we have been happily married ever since. While visiting his country I learned to appreciate the use of spices. Moroccan women know how to mix just the right amount of each spice to give food an extraordinary flavor. Since we have been married it has become my passion to cook food that makes people say WOW!

Mother: I have two teenagers that think I am their personal taxi & ATM. My son Jonathan just turned 16 & my daughter Alyssa is 13.


Sister: I am the oldest of six children. I have three brothers & two sisters, ages ranging between 31-12. My oldest sister & I are best friends & her children are like my own. Without her my life would be dull.

Smen is the key to getting authentic tasting Moroccan dishes such as couscous & rfissa. It is rancid butter similar to ghee but herbs are used in it. It can be hard to come by so I purchase mine online at http://www.zamourispices.com. $8 dollars seems high for only 1/2 pint but it lasts a very long time. Only a small amount is used at a time like with saffron. I also purchase harissa from this site. It comes in both a sauce & powder. I prefer the powder since I can make my own sauce from it & I can also add it dry to recipes.
